Hi Kimberly,
There isn't a dedicated statistic tracker for user Guide creation in LibGuides.
However, you can go to Content>Guides, and filter Guides by an owner, before reviewing the created dates (image reference). There is also an export option for Guides that you could then use to collect that information in HTML or as a CSV file (shown in the green box in the image reference).
